Nomo: UG Students Redefining India's Street Snack, Healthily

India’s love for momo is no secret. But as food habits shift towards cleaner eating, a new question is quietly gaining ground on search engines and dinner tables alike: which are healthy, and can comfort food truly be made without compromise? From healthy momo near me to healthy momos for weight loss, consumers are actively looking for better alternatives. The concern is simple. Traditional momos, often made with refined flour, sit heavily on the body even when they feel light on the palate.

At the centre of this shift is a student-led venture from Masters’ Union called Nomo, built by 3 UG students - Harshita, Swayam, and Adish, from Cohort 27, who decided to rethink one of India’s most beloved street foods without stripping away its familiarity.

Redefining What a Better Version of Momo Means

A healthier approach to momo is no longer defined by steaming instead of frying. It now involves a deeper rethink of formulation, sourcing, and nutritional balance. The aim is to preserve comfort while improving what goes into each bite.

Traditional formats often rely on refined flour wrappers and low-quality fillings. Newer approaches focus on cleaner inputs and more balanced composition without altering the core identity of the dish.

What defines a nutritionally improved momo today:

  1. Health is determined at the ingredient level, not just the cooking method

  2. Protein and balance are central to formulation choices

  3. Taste consistency remains a key success factor

Rising Demand for Lighter Everyday Food Choices

Search trends and consumption patterns show a clear behavioural shift. Urban consumers are more aware of nutrition, calories, and ingredient sourcing than ever before. This awareness is reshaping how even small, everyday meals are evaluated.

Momos sit at a unique intersection of affordability, convenience, and indulgence, making them a natural focus for this change.

Why demand for better everyday snacks is growing:

The Gap Between Health And Taste That Most Momo Brands Have Overlooked

A group of UG students at Masters’ Union identified a simple but overlooked gap: people did not want to give up momo; they wanted a better version of them. Their approach focused on refining the product rather than replacing it.

Instead of rebuilding taste from scratch, they focused on improving ingredients while keeping familiarity intact. This allowed them to stay close to consumer expectations while improving nutritional value.

How student founders approached product rethinking:

  2. Familiar taste was prioritised for acceptance

Maintaining Familiar Taste While Improving Quality

One of the most difficult aspects of improving a familiar snack is behavioural. Consumers are resistant to change when it alters taste memory. This is why changes are subtle and carefully calibrated.

The focus remains on preserving texture, flavour profile, and emotional familiarity while improving the underlying nutritional structure.

Why familiarity matters in food innovation:

  2. Small improvements are more effective than drastic changes

  3. Emotional connection influences food choices strongly

     

What Real-World Testing Revealed About Demand

Testing across campuses, residential societies, and tech parks provided valuable insight into real consumption behaviour. The product was not treated as a one-time healthier option but as something consumers returned to.

Frequent sell-outs and repeat purchases indicated that acceptance was driven by satisfaction, not curiosity alone.

 

Insights from on-ground consumer testing:

Early performance showed consistent signals of traction across multiple activations. While revenue growth was steady, the stronger signal came from repeat behaviour and customer return rates.

This suggests that the category is not experimental anymore. It is forming into a repeatable consumption habit.

This model allows for both accessibility and scalability, ensuring the product reaches consumers in everyday environments.

This movement reflects a deeper transformation in eating habits. Convenience food is no longer exempt from scrutiny. Consumers expect taste, trust, and transparency to coexist in the same product.
